RESTAURANT BASICS - FOR ANY MEAL OF THE DAY: BREAKFAST

Cold cereals like shredded-wheat biscuits, puffed wheat or rice, and nugget cereal, or hot cereal like oatmeal (farina and corn grits are second choices since they're "refined" grains), are all fine, with skim milk: Already you've got the central part of a satisfying morning meal. (If skim milk isn't available, you might want to try fruit juice on your cereal.) Add fresh fruit as a topping for your cereal (or order it to have on the side); remember, it's better than fruit juice because it provides more fiber and fewer calories. Then have a slice or two of whole-wheat toast with a little jam, and hot herb tea - again, be prepared with your own herb tea bag in case they don't have it, or ask for hot water with fresh lemon, which makes a refreshing breakfast drink. You're all set! If you want eggs, order them poached or hard-boiled so you can set aside the yolks and enjoy the whites. The pancakes and waffles served in restaurants are usually made with whole eggs, so it's best to pass them up.
Or be inventive! If the restaurant isn't packed and frantic, and if it seems like a friendly place, ask for an egg-white omelet. Or perhaps they'd make up a terrific breakfast or brunch sandwich with the chopped whites of hard-boiled eggs and sliced tomatoes, lettuce, peppers, and mustard on a no-egg bagel: It's delicious! Another custom-tailored breakfast might be huevos rancheros, a Mexican dish popular in the West but popping up in various forms all over the country: Ask for a steamed (not fried) tortilla, topped with boiled (rather than refried) beans with some salsa or picante sauce, or chopped egg white. You might even be able to order baked or boiled potatoes to have with scrambled egg whites and chives or mushrooms - the worst they can say is no, and you may be introducing them to new dishes they'll end up offering regularly! Don't be shy; it's worth a try.
